While its bone is a bit shorter than the Tomahawk’s, the Cowboy otherwise mirrors the same tender, juicy, well-marbled flavor. Best cooked on the grill or roasted using the reverse sear technique, this big beefy baby doesn't need more than a little coarse salt and a golden sear.
