Our Cowboy Ribeye Steak is a thick, bone-in ribeye that has been masterfully cut by our butchers. While its bone is a bit shorter than the Tomahawk’s, the Cowboy otherwise mirrors the same tender, juicy, well-marbled flavor. Best cooked on the grill or roasted using the reverse sear technique. 

Prairie Street Co's Delmonico Steak is the thing legends are made of! This bone-in behemoth is expertly trimmed from the chuck ribeye border. Named after the famous Delmonico's Restaurant in New York City, the Delmonico Steak is known for its incredible marbling and rich beefy flavor. Ideal for grilling or pan searing, we recommend a good sear, a rare to medium-rare interior, and a peppercorn sauce.

Our Denver Strip is a steak perfect for the grill or the skillet. This lean cut is taken from just under the shoulder blade making it beautifully marbled and tender. Easy to prepare, Prairie Street Co's Denver Strip is a treat for any night of the week.

The Flat Iron Steak is cut from the shoulder, or chuck, and is beautifully marbled, uniform in thickness, and rectangular in shape. Tenderize your Flat Iron with your favorite marinade and then cook over a high grill or hot skillet. We suggest slicing against the grain to yield optimum tenderness and serving with fries and jus!  1 Steak per package (1lb)

Move over short ribs, there's a new cut in town! The Korean Cut (or Miami Cut) Short Ribs are cut across the bone and sliced "thin". We say "thin" because compared to your average short rib there is an ample amount of unctuous beef surrounding these bones. Great on the BBQ or braised in the oven.
