Ingredients

  • 1 Prairie Street Prime Kosher USDA Veal Chop
  • 1 teaspoon avocado oil
  • 4 sprigs fresh thyme, whole
  • 3 garlic cloves, whole
  • 4 carrots, peeled and cut into obliques
  • ½ cup fresh carrot juice
  • ½ cup honey
  • 1 tablespoon fresh dill, chopped
  • ½ lemon, zested and freshly juiced
  • Vegan pareve butter, divided
  • Freshly ground black pepper
  • Kosher salt

Instructions

  1. Season veal chop with salt and pepper.
  2. Heat avocado oil in a sauté pan; sear veal until caramelized on the first side, then flip.
  3. Add garlic, thyme, and vegan butter; baste the chop.
  4. Flip again, baste the first side, and cook to 135°F internally.
  5. Rest for 10 minutes with herbs, garlic, and basting liquid on top.
  6. In a saucepan, cook carrots with carrot juice, honey, and butter until fork tender.
  7. Add dill, lemon zest, and juice; reduce the liquid.
  8. Serve veal chop alongside glazed carrots.
