  • ½ cup parsley, chopped
  • 2 garlic cloves, chopped
  • 1 jalapeño pepper, chopped

  • ½ tablespoon kosher salt

Instructions

  3. Preheat grill for indirect grilling to 350°–400°F, oil grates.
  4. Place thighs skin-side down over direct heat, cover, and grill for 5 minutes.
  5. Move thighs to indirect heat, cover, and cook 8 minutes.
  6. Flip thighs and return to direct heat, cover, and cook 5 minutes.
  7. Move thighs back to indirect heat, cover, and cook another 8 minutes until internal temperature reaches 165°F.
  8. Plate with fresh mint sprigs and sliced citrus fruits.
