Ingredients
- 1 Prairie Street Veal Breast Pocket - Bone In
- 1 pound stuffing of choice (we used cooked rice pilaf with sauteed mushrooms)
- 2 tablespoons Dijon mustard
- 1 tablespoon fresh parsley
- 1 cup kosher marsala wine
- Kosher salt
- Freshly ground black pepper
Instructions
- Preheat oven to 375°F.
- Place veal breast pocket in a roasting pan and fill both pockets with prepared stuffing.
- Spread Dijon mustard over the fat cap, then season with salt, pepper, and parsley.
- Pour marsala wine into the roasting pan.
- Roast uncovered for about 90 minutes, checking the temperature after 60 minutes.
- Remove from oven once internal temperature reaches 135°F. Rest 30 minutes.
- While resting, make a pan sauce by adding extra wine to roasting juices and reducing slightly.
- Slice veal into 1–2"" slices and drizzle with pan sauce before serving.
